NTRN 250 - Food Science


An exploration of the scientific principles and terminology related to food and food preparation. The composition of food and food products as well as the principles of food preparation leading to paltatbility, maximun nutrient retention and food sanitation will be covered. Students will analyze recipes for nutritional content and modify them for various purposes. In the Food Science lab, students will test the theoretical principles of food science using the scientific method.

Credit Hours: 3
Prerequisite: NTRN 215  OR PHES 215
